Post Grad Slump

The random findings & babblings of a twenty-something living in Philadelphia. I graduated college in 2009 and I'm still getting used to this thing we call the "real world."

My favorite things include Philadelphia (the city, the sports, the food), traveling, ice cream, giraffes, taking pictures & finding recipes online that I'll probably never actually get around to making. It's an interesting mix, but so am I.

One of my co-workers’ last day was on Friday. She’s headed to law school in the fall.

So, since my cupcakes were such a hit last time I made them - I just had to make them again. But, this time, 3 batches… the last time they all went before 9am!

There were chocolate, vanilla, and vanilla with M&Ms.

First up were vanilla cupcakes with butter cream and crushed Snickers icing.

Next we have chocolate cupcakes with butter cream and caramel icing.

These happen to be my personal favorite. Chocolate cupcakes with chocolate and peanut butter icing.

Chocolate cupcakes with chocolate and fluff icing. This was a new one I decided try and they turned out awesome!

Another experiment that had a pretty good result - Chocolate cupcakes with chocolate, caramel and peanut butter icing. Also put this icing on the M&M cupcakes.

The rest of the M&M cupcakes had vanilla and caramel icing with crushed chocolate chips on top.

The end result!

Since there were SO many this time, it actually took all day for them to finally disappear. When I first put them in the kitchen, before an E-mail to the office even went out, there was a mad dash to them. Coworkers were taking two at a time. Many even went back for a third after lunch.

There were only two cupcakes left by the end of the day, but my coworker (who I made the cupcakes in honor of) quickly grabbed them up to take home.

I got so many compliments on them. But really, I didn’t do anything extraordinary. The icing and cupcakes were hardly made from scratch. Just a touch of creativity…that’s all!
